In Pokémon Scarlet and Violet, you will find a Shiny Stone close to a tree in the South Province (Area Six), north of Alfornada town, near the lake on top of the mountain. 

Once you reach Alfornada town, keep heading northeast till you reach the top of the mountain, where you find the lake and the tree where the Shiny Stone is located.
