Escaping out of the Grand Underground when you need to is pretty simple, yet can be a confusing thing since the game does not clearly tell you how to do this.
Nevertheless, all you need to do is press the ‘Y’ button on your Nintendo Switch console. This will bring up a window that will ask you to “go up” or “close”. Selecting “go up” is what you want to do, as that will let you exit the Grand Underground. Choosing “cancel” will close the window and let you resume activity in the Grand Underground.
