Genshin Impact log-in rewards are nothing but the HoYoLab daily check-in rewards that players can claim by a simple act of logging in to HoYoLab –> Daily Check In and tapping on the respective day reward.

Once that is done, the reward will get sent to players via the in-game mail. To claim the reward, players can log into Genshin Impact. Then navigate to the Mail section. There, players can either select Claim All or select the respective reward mail and then claim the associated rewards.
