Some sidequests in Shin Megami Tensei V can feel a little weird, which shouldn’t be surprising, considering the quest givers are demons, but no matter how weird they are, completing them will be very rewarding.

How to Complete The Ultimate Omelette Sidequest in Shin Megami Tensei V
The Ultimate Omelette sidequest can be started by talking with the Aitvaras found on the highway to the north of the Kamiyacho Leyline Fount in the Minato ward. You can find the exact location of the demon on the map above.
The Aivaras is looking to make the ultimate omelette, and for it to be truly ultimate, it needs to be done with a Jatayu Egg. The egg can be obtained by heading to the location marked on the map below, which is to the west of the highway.
Getting to the Jatayu nest won’t be easy, as the demon is patrolling the area, and it will come after you if it spots you. If you have accepted the quest as soon as it became available, you will have a very hard time fighting Jatayu, so you will have to escape from battle if it catches you. If you want to try taking it down, use Electric and Darkness attacks, and try to get the demon’s agility down with Sukunda to make it less likely for Critical Wave to hit.
After getting the Jatayu Egg, report back to the Aitvaras to complete the quest. You will get 600 EXP points as well as the Drake Talisman.
